Imagine a corn tortilla pancake stuffed with your choice of filling – cheese, beans, carnitas, jalapeno and more. This easy and delicious family friendly meal has made a great family lunch as well as diner and is like a cross between pancake and tamale and is naturally gluten free thanks to the masa dough.
- 3 cups masa harina
- 1 cup mozzarella cheese
- 2 tsp Kosher salt (sea salt will work in a pinch)
- 2-3/4 cup water
- Filling of choice – simple cheese or an exotic alternative, the choice is yours!
Combine masa harina, mozzarella, and Kosher salt and premix in a bowl. Add the water and kneed by hand (wet your hands first to keep it from sticking) until it is the consistency of play dough. Form two disk about 3/8-inch thick, place your filling of choice on the first disk and cover with the second. Lightly pinch the edges together to keep the filling in.
Cook over medium heat in an oiled pan for 3-5 minutes each side until crisp & lightly browned, allow to cool and serve.
